Personal Info

Dr. Littlefield graduated from Lubbock Christian University in 2005 with a B.S. in Exercise and Sport Science. She obtained a Master’s degree from Texas Tech University in Exercise and Sport Science with an emphasis in Exercise Physiology in 2007, where she worked as a Graduate Teaching Assistant. After graduating from Texas Tech, she worked as a youth fitness director, personal trainer, and group exercise instructor at various establishments. Laurel began her doctoral work at Auburn University in 2009. While at Auburn, she was a Graduate Research and Teaching Assistant, and was involved in supervising a school-sponsored community outreach program. Laurel transferred to Baylor University in 2010 where she continued as a Doctoral Teaching and Research Assistant. She currently serves an assistant professor in the Department of Exercise and Sport Science. Her research interests include the effects of exercise on metabolic health, specifically postprandial lipemia and type 1 diabetes. She met her husband, Brad, while attending LCU. Brad graduated from LCU in 2007 with a B.S. in Biology. They have a son, Griffin and two dogs, Dudlye and Harold.
